Age Matters… Mimolette

Nothing new here, flavor profiles for many things change with time.  We recently fell in love with Mimolette, and posted on it previously.  We went to a different Venissimo location than the first time bought it and ordered some.  The one they had was a younger version (<6 months) versus the 18+ month version we had before.  The older one’s rind was pitted and looked like the moon (see previous post), the younger one was smooth and ash gray/white.  The flavor of the younger cheese was a little more harsh, not the smooth and developed flavor we’d grown accustom to.  It was still good, don’t get me wrong, but there is something to be said for aged Mimolette.

We found this cheese in a wine/cheese pairings book, and it is a great tasting as it looks!  The staff at Venissimo described the cheese before cutting as a large dinosaur egg.  The rind has a great moonscape like surface.  Rich flavor similar to cheddar, salty, tangy, roast beef and au jus.

Welcome to the site!  It is still very much new, and under construction.  The recipes page is the best example (only a list for now, have to add them all from my notes…).

We love sharing great food and drink discoveries, recipes and businesses we find ourselves frequenting along the way.  Living in San Diego we’re fortunate to be surrounded by great food and drink including our neighborhood urban winery (Koi Zen Cellars).  Check out the Places We Love pane for links to these great businesses.  Also check out the various galleries (wine, cheese, meals and more) and the Recipes page.

In general I try to post about everything before it goes into a gallery or gets updated on the recipes page.  Also every photo and post is well tagged and categorized making it easier to locate things.  As the recipes are populated there will be links to the post highlighting it and/or gallery photos.
